With only handful of ingredients, this VEGAN, GLUTEN FREE, and DAIRY FREE cookie is absolutely going to be a win with the whole group. Not only is this snack a healthy alternative to sugar packed treats, but it is a great source of energy to get your day going. Yes, this means that you are allowed to eat cookies for breakfast. This option is a great alternative to the artificially flavored sugar snacks that you are tricked into buying at the store because they easy. This recipe can be completed in less that 20 minutes, including baking.
2 Medium Bananas
1/2 Cup Rolled Oats
1 Cup Quick Oats
1/2 teaspoon Cinnamon
1/4 teaspoon Salt
1/3 Cup Mini Chocolate Chips
Place 2 Bananas into medium bowl. Mash well with fork until smooth.
Add Rolled Oats, mix well. Let sit for 3 Minutes.
Add Quick Oats, Cinnamon, and Salt. Mix well.
Add Chocolate Chip, mix again.
Portion into desired cookie size circles, about 2 inches across and 2/3 inch thick.
Place onto baking sheet about 2 inches apart.
Bake at 350 for 12-15 minutes, or until firm on edges.
